Ingredients

  • 2 tablespoons unsalted butter
  • 2 medium leeks, light green and white parts only, halved lengthwise and thinly sliced (about 3 cups)
  • Salt and pepper
  • 1 clove garlic, thinly sliced
  • 4 cups low-sodium chicken broth
  • 1.5 pounds Yukon Gold potatoes, peeled and cut into ½-inch cubes (about 4 cups)
  • 1 fresh or dried bay leaf
  • 1 cup heavy cream
  • Chopped chives, for garnishing
  • Crusty bread, for serving

Equipment

  • Large pot or dutch oven
  • Blender (standard or immersion)
  • Fine-mesh sieve

Method

Sauté the Aromatics
  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced leeks and season with salt and pepper. Cook, stirring occasionally, until the leeks are softened and translucent, about 4-5 minutes. Avoid browning the leeks to maintain their delicate, sweet flavor. Add the thinly sliced garlic and cook for another minute until fragrant.
Simmer the Soup
  1. Pour in the chicken broth, add the cubed Yukon Gold potatoes and the bay leaf. Season again with salt. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low, cover, and let it simmer gently until the potatoes are completely fork-tender, approximately 15 minutes. Discard the bay leaf.
Blend to Perfection
  1. Carefully transfer the soup to a blender in batches (or use an immersion blender directly in the pot). Blend until just smooth. Over-blending can lead to a gummy texture. For an ultra-silky, restaurant-quality finish, strain the puréed soup through a fine-mesh sieve back into the pot. This step effectively removes any remaining small lumps or fibrous bits.
Finish with Cream
  1. Stir in the heavy cream. Gently warm the soup over medium-low heat for about 2 minutes, stirring frequently. Be careful not to boil the soup after adding the cream. Taste and adjust seasoning with salt and pepper as needed.
Serve and Enjoy
  1. Ladle the hot, creamy soup into bowls. Garnish generously with fresh chopped chives. Serve immediately with slices of crusty bread for dipping.

Notes

Yukon Gold potatoes are preferred for their creamy texture and ability to break down smoothly. Russets can be used but may yield a starchier result. Use only the light green and white parts of leeks and ensure they are thoroughly cleaned to remove grit. Low-sodium chicken broth is recommended to control saltiness; vegetable broth can be used for a vegetarian/vegan option. Heavy cream provides the richest texture; half-and-half or a plant-based cream alternative can be used for lighter or vegan versions. Layer seasoning at multiple stages for depth. Cook at a gentle simmer. Straining after blending ensures a silky texture. Consider adding white pepper for subtle spice or sautéing leeks with a tablespoon of dry white wine for complexity. Don't overcook garlic to avoid bitterness.
Storage: Cooled soup can be stored in an airtight container in the refrigerator for up to 3-4 days. Freezing is possible, but the texture of the cream may change upon thawing; it's best to omit the cream before freezing and stir it back in after reheating. Reheat gently on the stovetop over low heat, stirring occasionally. Avoid boiling, especially after adding cream.
