Prep & Season Chicken
- Preheat your oven to 350°F (175°C). In a small bowl, combine the Italian seasoning, chili powder, salt, and black pepper. Press this seasoning blend evenly onto both sides of the chicken breasts.
Sear for Flavor
- Heat the olive oil in a cast-iron skillet over medium-high heat on the stovetop. Once the skillet is hot, carefully place the seasoned chicken breasts into the oil. Sear for 4-5 minutes per side until beautifully browned. The chicken will not be fully cooked at this stage; this searing is crucial for developing deep flavor through the Maillard reaction, even though it's not the final cooking step. The extra oil also helps create a richer sauce base.
Sauté Garlic
- Add the minced garlic to the skillet with the seared chicken. Sauté for about 1 minute until fragrant and lightly golden, being careful not to burn it.
Deglaze and Build Sauce
- Pour the chicken stock and lemon juice into the skillet. Use the liquid to deglaze the pan, scraping up any browned bits from the bottom. Arrange the seared chicken breasts around the outer edges of the skillet. Place the block of feta cheese in the center, nestled amongst the tomatoes.
Bake to Perfection
- Arrange the grape tomatoes around the feta cheese. Spoon some of the hot liquid from the skillet over the feta and tomatoes. Carefully transfer the cast-iron skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Cooking time may vary based on chicken thickness and searing time.
Rest and Finish
- Once cooked, remove the skillet from the oven. Let the chicken rest for 5 minutes – this is essential for juicy, tender meat. While the chicken rests, remove the chicken breasts from the skillet and set aside. Use a fork or spoon to vigorously stir in the feta and tomatoes into the pan juices, breaking down the feta to create a creamy, luscious sauce. Return the chicken to the skillet, spooning the rich sauce over the top. Garnish generously with the thinly sliced fresh basil.
Notes
Feta Cheese: While a block of feta is recommended for optimal melting into a creamy sauce, crumbled feta can be used in a pinch. For a lower-fat option, choose reduced-fat feta, though the sauce may be slightly less creamy.
Chicken: Boneless, skinless chicken thighs can be substituted for breasts. They offer a richer flavor and are more forgiving if slightly overcooked, ensuring a moister result.
Tomatoes: Cherry tomatoes are a perfect substitute if grape tomatoes are unavailable.
Herbs: Feel free to experiment with other dried herbs like oregano or thyme, or add fresh rosemary for a more robust flavor profile.
