Ingredients

  • 2 lbs sweet potato cubed into ½ inch pieces (about 2 medium sweet potatoes, or 6 cups)
  • 1 jalapeno pepper optional: seeds removed and finely diced
  • 2 tablespoons vegetable oil
  • ¼ teaspoon salt & pepper to taste (¼ teaspoon is a good start)
  • 1 lb ground Italian sausage meat (approx. 4 sausages, removed from casings)
  • 1 green bell pepper diced into ½ inch pieces
  • 1 yellow onion diced into ½ inch pieces
  • 2 ribs celery diced into ⅛ inch pieces
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • ½ lime juice (about 1 tablespoon)

Equipment

  • 12-inch skillet with high sides

Method

Brown the Sweet Potatoes
  1. Preheat a large 12-inch skillet with high sides over medium-high heat. Add the vegetable oil. Once shimmering, add the cubed sweet potatoes and diced jalapeno (if using). Spread them into an even layer. Let the sweet potatoes cook undisturbed for 2-3 minutes to allow them to develop a golden-brown crust. Stir the sweet potatoes, season with salt and pepper, and let them cook for another 2-3 minutes, undisturbed, to continue browning.
Cook the Sausage
  1. Push the sweet potatoes to one side of the skillet. Add the ground Italian sausage meat to the empty side. Cook for about 3 minutes, breaking up the sausage with your spoon, until it's browned and cooked through.
Combine and Sauté
  1. Stir the browned sausage and sweet potatoes together. Add the diced green bell pepper, yellow onion, celery, and minced garlic. Stir everything to combine well.
Simmer to Perfection
  1. Cover the skillet with a lid and reduce the heat slightly to medium. Continue to cook, stirring frequently, for about 10 minutes. This allows the vegetables to soften and the sweet potatoes to become fully tender, easily pierced with a fork. The moisture from the vegetables will help steam and cook the sweet potatoes.
Finish and Serve
  1. Remove the skillet from the heat. Stir in the dried oregano and fresh lime juice. Taste and adjust seasoning if needed. Serve immediately.
