  • 2 teaspoons grated ginger
  • 1 clove garlic, grated
  • 2 teaspoons tamari
  • 1 tablespoon lemon juice for tahini sauce
  • 2 teaspoons honey

Equipment

  • Baking sheet
  • blender
  • Bowl

Method

1. Marinate the Chicken
  1. In a bowl, combine the full-fat Greek yogurt, extra virgin olive oil, cubed chicken, chopped garlic, chopped shallots, smoked paprika, chopped fresh oregano, chili flakes, Kosher salt, and black pepper. Mix well to ensure the chicken is evenly coated. Let the chicken marinate for at least 15 minutes at room temperature. For deeper flavor, you can marinate it in the refrigerator for up to overnight.
2. Cook the Chicken
  1. Preheat your oven to 425°F (220°C). Arrange the marinated chicken in a single layer on a baking sheet. Bake for 15 minutes. Toss the chicken pieces, then bake for another 5-10 minutes, or until the chicken is cooked through. To achieve a delicious char and enhance flavor, switch the oven to the broil setting and broil for 1-2 minutes, watching carefully to prevent burning.
3. Prepare the Fresh Toppings
  1. While the chicken is baking, in a separate bowl, combine the chopped Persian cucumbers, diced avocado, lemon juice, chopped fresh dill, salt, and pepper. Gently toss to combine.
4. Make the Tahini Sauce
  1. In a blender, combine the tahini, grated ginger, grated garlic clove, tamari, 1 tablespoon lemon juice, and 2 teaspoons honey. Add 1/4 cup of water and blend until smooth. If the sauce is too thick for drizzling, add more water, one tablespoon at a time, until you reach your desired consistency. Season with salt to taste.
5. Assemble the Bowls
  1. Start with a base of lettuce in each bowl. Top generously with the cooked Mediterranean chicken, the cucumber-avocado mixture, and crumbled feta cheese. Add any other desired toppings like peperoncini, chopped onion, or cherry tomatoes. Dollop with 1-2 cups of tzatziki sauce and finish with a generous drizzle of the prepared tahini sauce.
