Ingredients

  • 1 English cucumber cucumber (diced)
  • 2 pints grape/cherry tomatoes (chopped in half)
  • 8 oz feta (diced)
  • 1/4 cup parsley (chopped)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Equipment

  • Large mixing bowl
  • Small Bowl

Method

Prepare the Vegetables and Feta
  1. Wash and thoroughly dry your cucumber and tomatoes. Dice the English cucumber into bite-sized pieces. Halve the grape or cherry tomatoes. Dice the block of feta cheese into similar-sized cubes.
Combine Fresh Ingredients
  1. In a large mixing bowl, combine the diced cucumber, halved tomatoes, diced feta, and freshly chopped parsley. Gently toss to distribute.
Make the Dressing & Toss
  1. In a small bowl or directly over the salad ingredients, combine the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper. Mix well until the dressing is emulsified. Pour the dressing over the salad ingredients.
Mix and Serve
  1. Gently toss everything together until all the ingredients are evenly coated with the dressing. Serve immediately or allow to sit for 15-30 minutes for flavors to meld.

Notes

This salad is best served fresh. For optimal texture, dress it just before serving. The flavors meld beautifully if allowed to sit for 15-30 minutes before eating.
