Ingredients

  • 1 bunch carrots, scrubbed and patted dry about 1 pound
  • 2 teaspoons grapeseed oil or other high-heat oil
  • 1/2 teaspoon salt, divided
  • 1 tablespoon dill, minced fresh
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon freshly ground black pepper

Method

Prepare the Carrots
  1. Trim the tops and any fibrous ends from the carrots. Cut them crosswise into pieces approximately 3 inches long. If you have very thick carrots, cut the thicker ends in half lengthwise, aiming for all pieces to be about 1/2- to 3/4-inch thick for even cooking. In a medium bowl, toss the prepared carrots with the grapeseed oil and 1/4 teaspoon of salt until evenly coated.
Roast the Carrots
  1. Preheat your oven to 400°F (200°C). Spread the seasoned carrots in a single layer on a baking sheet. Roast for 20-25 minutes, flipping them halfway through, until tender and lightly caramelized. Alternatively, for grill marks, preheat a grill pan or outdoor grill over medium-high heat. Place carrots cut-side down on the grill and cover. Grill for 4-5 minutes per side, until they develop sear marks and are beginning to soften. Carrots should be tender with a slight crunch in the middle.
Finish and Serve
  1. Transfer the roasted or grilled carrots to a clean bowl. Add the remaining 1/4 teaspoon salt, minced fresh dill, fresh lemon juice, and freshly ground black pepper. Toss gently to combine. Serve warm or at room temperature.

Notes

Ingredient Notes & Substitutions: Carrots: Opt for fresh, firm carrots of similar thickness for even cooking. Smaller to medium-sized carrots are ideal. Baby carrots can also be used, but cooking times will vary. High-Heat Oil: Grapeseed oil is recommended for its high smoke point, ensuring carrots sear nicely without burning. Other suitable oils include avocado oil or refined sunflower oil. Herbs: If fresh dill isn't available, consider substituting with fresh parsley, chives, or a mix of your favorite herbs. For a different flavor profile, try thyme or rosemary, keeping in mind they are more potent. Citrus: Lime juice can be used as a substitute for lemon juice, offering a slightly different tangy profile. Orange juice can also be used for a sweeter note.
Pro Tips for Perfect Carrots: Uniformity is Key: Cutting carrots into similar sizes ensures they cook evenly. Don't Crowd the Pan: Use a large enough baking sheet to allow carrots to cook in a single layer. High Heat is Your Friend: Roast or grill carrots at a medium-high to high heat. Taste and Adjust: Always taste the final dish and adjust seasoning. Meal Prep Ready: Roasted carrots store well and can be made ahead. Indoor Grilling Alternative: Use a hot cast iron skillet for a stovetop version.
Serving Ideas: As a Standalone Side: Delicious served warm or at room temperature alongside grilled chicken, fish, or steak. Part of a Medley: Incorporate into a larger roasted vegetable platter. Garnish: Sprinkle with extra fresh dill or a pinch of flaky sea salt. Flavor Boost: Toss with a drizzle of balsamic glaze or a sprinkle of toasted nuts.
Storage and Make-Ahead Tips: Refrigeration: Store leftover roasted carrots in an airtight container in the refrigerator for up to 3-4 days. Reheating: Gently reheat in the oven at 300°F (150°C) for 5-10 minutes, or warm them through in a skillet over low heat. Make-Ahead: Roast the carrots completely, let them cool, store plain, and toss with fresh dill, lemon juice, and final seasoning just before serving.
