  • 1 cup celery (diced)
  • 1 cup white or yellow onion (diced)
  • 1 green bell pepper (diced)
  • 1 cup carrots (diced)
  • 2-3 cloves garlic (minced)
  • 4 cups chicken broth low-sodium recommended
  • 14 oz can diced tomatoes ((basil, oregano, garlic flavor)) with their juices
  • 1/2 head cabbage (chopped)
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • 1/2 teaspoon red pepper flakes adjust to taste
  • few shakes black pepper
  • 1/2 teaspoon salt optional, adjust to taste

Equipment

  • Large pot or dutch oven

Method

Sauté Aromatics
  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the diced celery, onion, bell pepper, and carrots. Sauté for 5-7 minutes, or until the vegetables begin to soften slightly.
Add Garlic
  1. Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
Combine Liquids & Core Veggies
  1. Pour in the chicken broth. Add the canned diced tomatoes (with their juices) and the chopped cabbage. Stir everything together.
Simmer to Perfection
  1. Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the cabbage and carrots are tender to your liking.
Season & Finish
  1. Stir in the dried oregano, basil, red pepper flakes, black pepper, and salt (if using). Taste the broth and adjust seasonings as needed.
Serve
  1. Ladle the hot soup into bowls and enjoy immediately!

Notes

For a richer flavor, consider using homemade chicken broth or a low-sodium vegetable broth for a vegetarian/vegan option. Feel free to add other low-calorie vegetables like zucchini, green beans, or spinach. Adjust red pepper flakes to your personal preference. For an extra depth of flavor, consider adding a bay leaf during simmering and removing it before serving. While dried herbs work well, adding a sprinkle of fresh parsley at the end can brighten the flavor.
