Ingredients

  • 4 oz fresh spinach roughly chopped
  • 4 large eggs
  • 1 Tbsp butter
  • 1 oz feta crumbled
  • 1 pinch crushed red pepper
  • 1 pinch freshly cracked black pepper
  • 1 pinch salt

Equipment

  • Large skillet
  • Bowl
  • spatula

Method

  1. Roughly chop the spinach into about 1-inch pieces.
  2. Crack the 4 large eggs into a bowl. Add a pinch of salt. Whisk until just combined – aim for ribbons of white and yellow for a classic scramble, or whisk longer for a uniform color.
  3. Melt the butter in a large skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until it softens and wilts.
  4. Push the wilted spinach to the sides of the skillet. Pour the whisked eggs into the center. As the eggs begin to set, gently fold them with a spatula. Continue folding until the eggs are about 75% cooked (still slightly wet).
  5. Fold the eggs into the spinach. Turn off the heat. The residual heat will finish cooking the eggs to a perfect, tender consistency without drying them out.
  6. Top the scramble with crumbled feta cheese, freshly cracked black pepper, and a pinch of crushed red pepper. Serve immediately.

Notes

This Mediterranean Egg Scramble is a delicious and healthy way to start your day. It's packed with flavor from spinach and feta, and comes together in under 15 minutes. For tips on making the perfect scramble, remember to use medium heat, fold gently, and don't overcook the eggs. Adding feta at the very end preserves its texture.
