Ingredients

  • 1 ½ cup almond milk (or any other dairy-free milk)
  • 1/3 cup chia seeds
  • 1/4 cup unsweetened cacao or cocoa powder
  • 1 tsp ground turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1-2 tbsp raw honey (or maple syrup)
  • Toppings: fruits, nuts, shredded coconut, etc.

Equipment

  • high-powered blender
  • container with lid

Method

Step 1: Blend the Base
  1. Combine the almond milk, chia seeds, cacao powder, ground turmeric, cinnamon, vanilla extract, and honey (or maple syrup) in a high-powered blender. Blend on high speed until the mixture is completely smooth and homogenous, ensuring no clumps of cacao or spices remain. This step is crucial for a velvety texture.
Step 2: Chill to Thicken
  1. Pour the blended mixture into a container with a lid, or divide it into individual serving bowls and cover them. Refrigerate for at least 4 hours, or ideally overnight. This allows the chia seeds to absorb the liquid and create a thick, pudding-like consistency.
Step 3: Serve and Enjoy
  1. Once thickened, stir the pudding if needed. Spoon into serving dishes. Get creative with your favorite toppings and serve chilled.
