Method
To Roast the Apples + Sweet Potatoes
- Preheat oven to 400°F (204°C).
- Slice the apples and sweet potatoes into even pieces.
- Toss them with olive oil, ground cinnamon, and nutmeg.
- Roast on a baking sheet for 25–30 minutes until soft and caramelized.
To Make the Cinnamon Pecan Topping
- Melt butter in a small skillet over medium heat.
- Add pecans, oats, honey, and cinnamon.
- Stir continuously for 2–3 minutes until lightly golden and aromatic. Set aside for garnish.
Blend Everything Together
- In a blender or food processor, combine roasted apples, sweet potatoes, and vegetable stock.
- Blend until smooth and creamy. Adjust consistency with more stock as needed.
To Make the Soup
- Heat oil in a large pot over medium heat.
- Sauté red onion and garlic until golden and fragrant.
- Add the blended mixture, honey, and all spices. Stir well.
- Slowly pour in heavy cream. Cook for 5–7 minutes over low heat, stirring often.
- Gradually mix in shredded cheddar cheese until melted.
- Serve hot with cinnamon pecan topping.
