Ingredients
  

  • 3 Tbsp butter (salted or unsalted)
  • 2 cups diced onions or shallots
  • 2.5 pounds sweet potatoes or yams (peeled, cut into medium chunks)
  • 2 large apples (about 1¼ pounds, peeling is optional)
  • 6 cups vegetable broth (use low- or no-sodium if possible)
  • 0.75 tsp ground cinnamon
  • 0.75 tsp ground nutmeg
  • 1 tsp salt (or to taste, depends on saltiness of broth)
  • 2-3 Tbsp fresh lemon juice
  • 1 Tbsp maple syrup (+ more for serving, optional)

Method
 

Preparation
  1. Gather and prep all ingredients according to the specifications above.
Cook Onions
  1. Melt butter in a large pot or Dutch oven over medium heat. Add onions and cook for 3–4 minutes or until softened, stirring occasionally.
Add Sweet Potatoes and Apples
  1. Stir chunks of sweet potatoes and apples into the pot and cook for about 3 minutes.
Deglaze
  1. Pour 2 cups of broth into the pot, scraping any brown bits from the bottom to deglaze for added flavor.
Simmer
  1. Add the remaining broth, cinnamon, nutmeg, and salt. Stir well, cover partially, and simmer until the sweet potatoes are tender, about 7–10 minutes.
Purée
  1. Turn off the heat and purée the soup until smooth using an immersion blender. If using a traditional blender, work in small batches.
Adjust Flavors
  1. Taste the soup and adjust with lemon juice, maple syrup, and/or more salt as needed.
Serve
  1. Serve the soup hot. For additional flair, drizzle a bit of maple syrup or sprinkle with chili powder. Enjoy!
