Ingredients
  

  • 1 8-ounce block feta cheese Greek-style, whole block
  • 12 large eggs adjust bake time for smaller or jumbo eggs
  • 2 tablespoons extra virgin olive oil plus more for greasing the dish
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pita pocket for serving
  • Fresh basil and/or mint for serving

Method
 

Prepare the Baking Dish
  1. Preheat your oven to 400°F. Grease an 8x11 baking dish with olive oil to prevent sticking.
Add Feta and Eggs
  1. Place the feta block in the middle of the baking dish. Crack 12 eggs around it, spreading them out evenly. Drizzle olive oil over the feta and eggs. Sprinkle salt over the eggs, and season both the eggs and feta with black pepper.
Bake to Perfection
  1. Bake the dish in the preheated oven for 18-22 minutes. The feta will melt, and the egg whites around the edges will set.
Scramble and Serve
  1. Use a fork to gently scramble the eggs and melted feta together. It’s okay if some of the whites look slightly wet, as residual heat will finish cooking them. Serve warm and enjoy!
Garnish and Enjoy
  1. Scoop the mixture into pita pockets and garnish with fresh basil and/or mint leaves for a flavorful finish.
