Ingredients
  

  • 1 1/2 lbs beef stew meat *For leaner options, see Notes section
  • 2 1/2 Tbsp olive oil divided
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 3/4 cups chopped yellow onion (1 large)
  • 1 1/4 cups peeled and chopped carrots (3 medium)
  • 1 cup chopped celery (3 medium)
  • 1 1/2 Tbsp minced garlic (4 cloves)
  • 8 cups low-sodium beef broth or chicken broth
  • 28 oz canned diced tomatoes (two 14 oz cans)
  • 1 1/2 tsp dried basil **Can substitute with fresh basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 lb red or yellow potatoes (chopped into 3/4-inch cubes)
  • 1 1/2 cups chopped green beans (5 oz, trim ends first)
  • 1 1/2 cups frozen corn ***Can substitute with fresh corn
  • 1 cup frozen peas Can substitute with fresh peas
  • 1/3 cup chopped fresh parsley

Method
 

Step 1: Brown the Beef
  1. Heat 1 Tbsp olive oil in a large pot over medium-high heat. Dab beef dry with paper towels, season with salt and pepper, then add half of the beef to the pot and brown for about 4 minutes, turning halfway through. Transfer to a plate and repeat with the remaining beef using an additional 1/2 Tbsp olive oil.
Step 2: Sauté the Vegetables
  1. In the now-empty pot, add another 1 Tbsp olive oil. Sauté onions, carrots, and celery for 3 minutes, then add garlic and sauté for 1 minute longer.
Step 3: Simmer the Soup
  1. Pour in the broth, diced tomatoes, browned beef, basil, oregano, and thyme. Season lightly with salt and pepper. Bring to a boil, then reduce heat to low. Cover and let simmer while stirring occasionally for 30 minutes.
Step 4: Add Potatoes and Green Beans
  1. Stir in the potatoes and continue simmering, covered, for another 20 minutes. You can add green beans at this stage if you prefer them very soft.
Step 5: Finish with Corn, Peas, and Parsley
  1. Stir in the green beans and continue simmering for 15 minutes, or until all veggies and beef are tender. Add in the frozen corn and peas and cook until heated through, about 5 minutes. Finish by stirring in fresh parsley and serve warm.
