  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon or pumpkin pie spice Pumpkin pie spice recommended for added complexity
  • 1 cup pumpkin puree Unsweetened, fresh or canned
  • 3 eggs Can substitute flax eggs for a vegan version
  • mini chocolate chips Optional, can substitute pecans or walnuts

Method
 

Make Keto Pumpkin Bread
  1. Grease a 9x5 loaf pan or line it with parchment paper.
  2. Preheat the oven to 325°F.
  3. In a mixing bowl, stir all the ingredients together until completely smooth.
  4. Pour the batter into the prepared loaf pan and place it on the oven's center rack.
  5. Bake for one hour or until a toothpick inserted into the center comes out clean.
