  • 1 medium white or yellow onion, halved and sliced into ½-inch strips
  • 2 cloves garlic, minced
  • Kosher salt (such as Diamond Crystal) and black pepper
  • Crushed red pepper
  • 1 medium cabbage (approximately 2 ½ pounds), cut into quarters, cored, and sliced crosswise into ½-inch-thick strips (about 8 cups)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon whole-grain, stone-ground, or Dijon mustard, plus more for serving
  • Chopped fresh parsley, for serving

Method
 

Brown the Kielbasa
  1. Heat a large cast-iron skillet or pan over medium-high heat. Add the kielbasa coins and cook until golden brown and slightly charred, about 3 minutes on each side.
Cook Aromatics
  1. Add butter, onion, garlic, 1 teaspoon salt, ½ teaspoon black pepper, and a pinch of crushed red pepper. Cook, stirring, until the onion begins to brown and the garlic becomes fragrant, about 3 minutes.
Saute the Cabbage
  1. Add the cabbage and cook, stirring occasionally, until most of the cabbage softens and browns, approximately 10–12 minutes.
Add Seasonings
  1. Stir in the vinegar and mustard, cooking for 1 minute, and taste for seasonings. Adjust with more salt, pepper, or mustard as needed.
Finish and Serve
  1. Garnish the dish with chopped parsley and serve immediately, alongside extra mustard. Enjoy!
