For the Roasted Brussels Sprouts
  • 12 oz Brussels sprouts
  • 2 tablespoons olive oil
  • salt and pepper
For the Chicken and Tortellini
  • 1 lb chicken thighs Skinless, boneless
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • black pepper Freshly ground, to taste
  • 3 tablespoons butter
  • 5 cloves garlic Minced
  • fresh thyme
  • 9 oz cheese tortellini

Method
 

Roasted Butternut Squash
  1. Preheat the oven to 400°F. Toss peeled, seeded, and cubed butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet. Roast for 20–25 minutes until tender and slightly caramelized, tossing halfway through.
Roasted Brussels Sprouts
  1. In a separate bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread on another baking sheet and roast at 400°F for 20–25 minutes until crispy and golden.
Chicken and Tortellini
  1. Season chicken thighs with smoked paprika, salt, and black pepper. Heat a large pan over medium heat, add butter, and sear chicken thighs until golden brown on both sides. Cook until the internal temperature reaches 165°F. Add minced garlic and fresh thyme to the pan, stirring until fragrant. Toss cooked tortellini into the pan, coating well with the buttery garlic sauce.
