Ingredients
  

  • 2 small boneless skinless chicken breasts (can substitute rotisserie chicken)
  • Salt/pepper to taste
  • 3 cups chicken broth
  • 4 Tablespoons butter
  • ½ cup onions finely diced
  • ½ cup celery finely diced
  • ½ cup carrots finely diced
  • 2 cloves garlic minced
  • ½ teaspoon onion powder
  • ½ teaspoon dry thyme
  • ½ teaspoon dry rosemary
  • ¼ teaspoon ground sage
  • 1/3 cup flour
  • ½ cup half and half
  • 1 cube chicken bouillon
  • 1 teaspoon low sodium soy sauce (can substitute Worcestershire sauce)
  • 1 cup frozen peas

Method
 

For the Biscuits
  1. Prepare biscuit dough by working cold butter into dry ingredients. Add wet ingredients and mix gently. Chill dough if needed, then roll and cut biscuits.
  2. Place biscuits over chicken pot pie filling before baking.
For the Chicken Pot Pie
  1. Season chicken with salt and pepper, cook thoroughly, and shred or dice. Set aside.
  2. Melt butter in a large skillet over medium heat. Sauté onions, celery, and carrots for 5 minutes. Add garlic and cook for 1 more minute.
  3. Stir in onion powder, thyme, rosemary, and sage, cooking for 30 seconds. Add flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in chicken broth and half and half until thickened. Add bouillon cube, soy sauce, shredded chicken, and frozen peas. Simmer for 5-7 minutes.
  5. Transfer filling to a baking dish. Top with prepared biscuits and bake at 375°F for 20-25 minutes until biscuits are golden. Let rest for 5 minutes before serving.
