Ingredients
  

For the Corn Beef
  • 4 pounds corned beef brisket (flat or point cut, with spice packet*)
  • 2 tablespoons oil (for searing)
  • 1.5 cups beef broth
  • 3 tablespoons whole grain mustard
  • 6 cloves garlic (smashed and left whole)
  • 1 large onion (sliced into wedges)
  • 15-20 whole peppercorns (or fresh cracked pepper to taste)
  • 8-10 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
For the Vegetables
  • 2 pounds carrots (peeled and quartered (8-10 carrots))
  • 0.5 cup butter (1 stick)
  • 1 large head green cabbage (sliced into wedges)
  • 1 teaspoon kosher salt
  • 2 pounds red potatoes (as roasted side)
  • 1 batch Horseradish Sauce (for serving)
  • parsley or chives (to garnish)

Method
 

Step 1: Sear the Beef
  1. Heat a large skillet over medium-high heat for 2 minutes. Add oil, swirl to coat, then sear the drained beef for 2-4 minutes per side until browned.
Step 2: Prepare the Cooking Liquid
  1. Place the seared beef fat side up in a crock pot. Combine beef broth and mustard, add to the skillet to scrape browned bits, then pour over the beef.
Step 3: Add Aromatics
  1. Smash garlic cloves and toss into the crock pot along with onion wedges, peppercorns, thyme, and bay leaves. Sprinkle spice packet on top and cook on low for 6-7 hours.
Step 4: Cook the Carrots
  1. Peel and slice carrots; add them on top of the beef and cook for another 1-2 hours.
Step 5: Prepare the Cabbage
  1. Slice cabbage into wedges, saute in butter with salt for 10 minutes, then layer on top of carrots in the crock pot and cook on low for 30-60 minutes.
Step 6: Serve
  1. Transfer all cooked ingredients to a platter, slice beef against the grain, and garnish with parsley or chives. Serve with roasted potatoes and horseradish sauce.
