Instant Pot (Pressure Cooker) Method
- Turn on the sauté function of the Instant Pot and add a splash of stock. Sauté the onion, garlic, carrots, celery, and mushrooms until aromatic and softened (about 4-5 minutes).
- Add the sweet potato, rinsed wild rice, bay leaf, Old Bay seasoning, and remaining vegetable stock. Stir well to combine.
- Seal the lid and cook on high pressure for 35 minutes. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
- Stir in the coconut milk and chopped kale. Season with salt and freshly cracked black pepper to taste. Serve warm and enjoy!
Stovetop Method
- In a large pot, heat a splash of stock over medium heat. Add the onion, garlic, carrots, celery, and mushrooms. Sauté until softened and fragrant (about 5-6 minutes).

- Reduce the heat to low, cover, and simmer for 45-50 minutes or until the sweet potatoes are fork-tender and the wild rice is fully cooked.
