Ingredients
  

For the Roasted Apples
  • 2 Honeycrisp, Gala, or Sweet Tango apples, sliced
  • 2 Tbsps Extra virgin olive oil
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Ground allspice
For the Homemade Croutons
  • Cubed bread
  • 1 Tbsp Extra virgin olive oil
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Dried thyme
For the Soup Base
  • 1 Tbsp Unsalted butter
  • 1 Tbsp Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 4 cups Organic vegetable stock Divided
  • 1 Tbsp Raw honey or maple syrup
  • 4 Tbsps Organic all-purpose flour
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 2 cups Organic pumpkin puree (NOT Pie filling)
  • 1 cup Organic heavy cream
  • 1 cup Freshly-grated Parmesan cheese

Method
 

To Roast the Apples
  1. Preheat oven to 400°F. Arrange sliced apples on a baking sheet and toss with olive oil, cinnamon, nutmeg, and allspice. Roast for 15–20 minutes until caramelized and fragrant. Set aside.
To Make the Homemade Croutons
  1. Toss cubed bread with olive oil, garlic powder, oregano, basil, and thyme. Spread on a baking sheet and bake at 375°F for 10–15 minutes until golden and crisp.
To Make the Soup Base
  1. In a large pot, melt butter and olive oil over medium heat. Sauté garlic until fragrant. Add flour to create a roux, stirring constantly. Gradually add vegetable stock while whisking. Stir in pumpkin purée, roasted apples, honey, spices, and simmer for 15 minutes. Finish with heavy cream and Parmesan cheese.
Blend Everything Together
  1. Using a high-speed blender, work in small batches for a smooth consistency. Taste and adjust seasoning as needed.
