Preparing and Cooking Steps
- Drain 3 tablespoons of oil from the sun-dried tomato jar into a Dutch oven. Chop the sun-dried tomatoes and set them aside.
- Set the pot over medium-high heat. Add the sausage and onion. Cook, breaking up the meat as you go, until browned. Add the shallots, garlic, carrots, celery, Italian seasoning, salt, and pepper. Cook for another 5 minutes until fragrant.
- Pour in the broth and bring the mixture to a simmer. Cook for 10 minutes over medium heat until the vegetables are tender.
- Stir in the spinach, chopped sun-dried tomatoes, and white beans. Mix in the cream, parmesan cheese, and lemon zest and juice. Heat through for a few more minutes until everything is warmed and well combined.
- Divide the soup among bowls. Garnish with additional parmesan and fresh parsley if desired. Enjoy with warm, crusty bread!
