Ingredients
  

  • 8 ounce oil-packed sun-dried tomatoes
  • 1 pound spicy Italian chicken sausage
  • 1 yellow onion, chopped
  • 2 shallots, chopped
  • 6 garlic cloves, chopped
  • 1 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 2 tablespoons Italian seasoning
  • 6 cups broth
  • 2 cans white beans
  • salt and black pepper, to taste
  • 2 cups baby spinach
  • 1 cup whole milk or cream
  • 1/2 cup grated parmesan cheese
  • 1 zest and juice of lemon
  • chopped parsley, for serving

Method
 

Prepare Ingredients
  1. Drain 3 tablespoons of oil from the sun-dried tomato jar into a Dutch oven. Chop the sun-dried tomatoes and set aside.
Cook the Sausage
  1. Set the pot over medium-high heat. Add the sausage and chopped onion. Cook the sausage, breaking it into small pieces as it browns.
Sauté the Vegetables
  1. Add the shallots, garlic, carrots, celery, Italian seasoning, salt, and pepper. Stir and cook for an additional 5 minutes, allowing the vegetables to soften and release their aroma.
Simmer the Base
  1. Pour in the broth and bring everything to a gentle simmer. Cook for 10 minutes, or until the vegetables are tender and the flavors deepen.
Finish with Creaminess
  1. Add the spinach, chopped sun-dried tomatoes, and white beans. Stir in the cream, parmesan cheese, lemon zest, and juice. Allow everything to heat through for another 3–5 minutes.
Serve
  1. Divide the soup among bowls and garnish with more parmesan cheese and fresh parsley. Serve immediately.
