Preparation Phase
- Preheat your oven to 375 degrees F (190 degrees C). Line a sturdy baking sheet with parchment paper to prevent sticking and for easier cleanup.
- Thoroughly drain and rinse your canned chickpeas under cold water. Using paper towels or a clean kitchen towel, pat the chickpeas very dry, aiming for them to be as moisture-free as possible.
First Roast: Drying for Crispness
- Spread the dried chickpeas in a single layer on your prepared baking sheet, ensuring they are not overcrowded. Roast for 20 minutes at 375 degrees F (190 degrees C), shaking the pan vigorously halfway through to ensure even drying.
Glazing & Seasoning
- Remove the chickpeas from the oven. While still warm, transfer them to a medium bowl. In the same bowl, combine the aquafaba, olive oil, curry powder, smoked paprika, garlic powder, sea salt, and black pepper.
- Toss everything together really well, making sure each chickpea is evenly coated with the seasoned aquafaba mixture until a light, glossy film forms over them.
Second Roast: Achieving the Ultimate Crunch
- Spread the coated chickpeas back onto the baking sheet in a single layer. Reduce your oven temperature to 325 degrees F (160 degrees C).
- Roast for an additional 25-30 minutes, or until the chickpeas are deeply golden brown, feel very crispy to the touch, and are wonderfully fragrant. Shake the pan every 10 minutes during this stage for even browning and crisping.
Cooling & Serving
- Once roasted to perfection, remove the chickpeas from the oven and let them cool completely on the baking sheet, as they will continue to crisp up further as they cool.
- Serve immediately as a satisfying snack, or prepare them for storage.

Notes
For optimal crispiness, ensure chickpeas are thoroughly dried before the first roast and spread in a single layer to avoid steaming. The aquafaba glaze is key for creating a thin, crispy shell. Adjust the amounts of curry powder, smoked paprika, garlic powder, sea salt, and black pepper to customize the flavor profile to your preference. Store roasted chickpeas in an airtight container at room temperature for 2-3 days. To restore crispness, re-roast them in a preheated oven at 350 degrees F (175 degrees C) for 5-10 minutes, or in an air fryer for a few minutes, until hot and crisp again.
