Make Chinese Cabbage Stir-Fry
- In a wok over high heat, add 2 tablespoons of oil. Sear the pork belly until caramelized.
- Reduce heat to medium and add the garlic and dried chilies. Stir-fry for a minute, taking care not to burn the garlic.
- Turn heat back to high and add cabbage along with Shaoxing wine, soy sauce, sugar, and water. Cover and let cook for 1–2 minutes.
- Uncover, add black vinegar and scallions, stir to combine, and season with salt to taste.
- Ensure cabbage is still slightly crunchy with caramelized edges. Serve immediately!
