  • 6 oz. pork belly Thinly sliced; substitutes include pork loin or chicken
  • 5 cloves garlic Smashed and cut in half
  • 5 dried red chilies Deseeded and roughly chopped
  • 1 1/2 lb. cabbage Hand-shredded and thoroughly dried
  • 2 teaspoons Shaoxing wine Can substitute with dry sherry or rice vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • 1 tablespoon water
  • 1/2 teaspoon Chinese black vinegar Substitute with balsamic or rice vinegar
  • 2 scallions Cut into 2-inch lengths

Method
 

Make Chinese Cabbage Stir-Fry
  1. In a wok over high heat, add 2 tablespoons of oil. Sear the pork belly until caramelized.
  2. Reduce heat to medium and add the garlic and dried chilies. Stir-fry for a minute, taking care not to burn the garlic.
  3. Turn heat back to high and add cabbage along with Shaoxing wine, soy sauce, sugar, and water. Cover and let cook for 1–2 minutes.
  4. Uncover, add black vinegar and scallions, stir to combine, and season with salt to taste.
  5. Ensure cabbage is still slightly crunchy with caramelized edges. Serve immediately!
