  • 3 Medium Zucchini sliced into ¼-inch rounds
  • 1 pint Cherry tomatoes halved
  • 1 Medium Red onion thinly sliced
  • 4 cloves Garlic minced
  • cup Kalamata olives pitted and halved
  • 4 oz Feta cheese crumbled; substitute dairy-free feta if preferred
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 tablespoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • Salt and freshly ground black pepper to taste

Method
 

Preheat the Oven and Prepare the Chicken
  1. Preheat the oven to 400°F (200°C). Pat the chicken dry and season it with dried oregano, thyme, paprika, salt, and pepper.
Prepare the Vegetables
  1. Slice the zucchini evenly to ensure consistent cooking. Drain any excess moisture after slicing by patting it with a paper towel. Halve cherry tomatoes and olives, and finely slice the red onion.
Assemble the Casserole
  1. Arrange the zucchini and chicken in a greased baking dish. Layer with cherry tomatoes, red onion, minced garlic, and olives. Drizzle olive oil and lemon juice evenly across the dish.
Bake the Dish
  1. Bake the casserole for 25–30 minutes until the chicken is fully cooked and the vegetables are tender. Use a meat thermometer to confirm a temperature of 165°F (74°C).
Rest and Serve
  1. Let the dish cool for 5 minutes, then crumble feta cheese on top, and garnish with basil, if desired. Serve immediately.
