Ingredients

  • 1 cup dried chickpeas Soak overnight
  • 1 small onion Roughly chopped
  • 2 cloves garlic Minced
  • 2 tablespoons parsley Chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon baking powder
  • salt To taste
  • pepper To taste
  • za’atar Recommended for a flavorful twist
  • oil For frying; choose oils with a high smoke point

Equipment

  • food processor
  • Deep skillet or fryer
  • Thermometer
  • paper towels

Method

Prepare the Chickpeas
  1. Soak the dried chickpeas overnight in plenty of water. Drain them well to avoid a watery mixture that makes the falafel fall apart.
Blend the Ingredients
  1. Add chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper to a food processor. Pulse until the mixture is finely ground but not pureed. Check that the mixture holds together when squeezed.
Rest and Bind
  1. Mix in the baking powder and allow the mixture to rest for 30 minutes. This step helps the flavors meld and ensures your falafel are sturdy during frying.
Shape the Falafel
  1. Form small balls or patties with your hands. Uniform shapes make frying easier and ensure even cooking.
Fry to Perfection
  1. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the falafel for 3–5 minutes until they turn golden-brown and achieve a crispy exterior. Drain on paper towels before serving warm.
