Sauté Aromatics
- Warm the olive oil in a large skillet over medium heat. Add the chopped yellow onion and cook until softened, about 3 minutes. Stir in the grated garlic and cook for just 30 seconds until fragrant – be careful not to burn it!
Toast the Chickpeas
- Add the drained and rinsed chickpeas to the skillet. Sprinkle with salt, black pepper, paprika, and dried oregano. Cook for about 3-4 minutes, stirring occasionally. You'll notice some chickpeas starting to lightly toast and pop – this Maillard reaction builds deep flavor and enhances texture.
Simmer & Infuse
- Pour in the vegetable broth and bring to a gentle simmer. Let it cook for 5 minutes, allowing the flavors to meld. For a thicker, creamier consistency, lightly mash a small portion of the chickpeas against the side of the skillet. Stir in the lemon zest and lemon juice. Turn off the heat completely before the next step.
Create the Creamy Sauce
- Add the Greek yogurt to the warm skillet (ensure the heat is OFF to prevent curdling). Stir gently until the yogurt is fully incorporated, creating a beautiful, creamy sauce that coats the chickpeas. If the mixture seems too thick, add 1-2 tablespoons of warm water or vegetable broth to reach your desired consistency.
Finish & Serve
- Garnish generously with fresh parsley (or dill) and crumbled feta cheese, if using. Add an extra grind of black pepper. Serve immediately while warm.
