Ingredients
  

  • 2 pounds Ground Beef (96/4) Use lean ground beef for lower fat content.
  • 15 oz can Sliced Stewed Tomatoes
  • 10 oz can RO-TEL (diced tomatoes with green chiles)
  • 15 oz can Black Beans * Use kidney beans as a substitute if preferred.
  • 15 oz can Pinto Beans * Substitute with other beans for texture variation.
  • 15 oz can Whole Kernel Corn * Make sure it's drained prior to use.
  • 2 packets Taco Seasoning Adjust quantity to taste for spiciness.
  • 1 packet Ranch Dip Mix Optional, replace with onion powder and garlic if preferred.
  • 12 oz bag Frozen Pepper & Onion Blend Fresh vegetables may be substituted.
  • 12 oz bag Frozen Broccoli & Cauliflower Florets Can use fresh if preferred.
  • 8 oz Fat Free Cream Cheese (room temp) Room temperature aids in smoother blending.
  • 1 cup Fat Free Greek Yogurt Optional for creaminess adjustment.

Method
 

Brown the Ground Beef
  1. Heat a large pot over medium-high heat. Brown the ground beef, breaking it apart and fully cooking until no pink remains.
Combine Canned Ingredients
  1. Add all canned ingredients and seasoning packets to the pot. Stir thoroughly to mix well. Bring to a boil.
Cook with Frozen Vegetables
  1. Add the frozen pepper and onion blend and broccoli and cauliflower florets. Lower the heat to simmer and cook for 6–8 minutes.
Add Creamy Elements
  1. Turn the heat to low or off. Stir in the room temperature cream cheese and Greek yogurt until fully incorporated.
Serve and Enjoy
  1. Serve the soup warm. Optional toppings include Greek yogurt or tortilla chips.
