Ingredients
  

For the Chicken
  • 1 lb chicken breast
  • 1 tbsp olive oil
  • 1 tsp za'atar
  • 1/2 tsp salt
  • 1/4 tsp pepper
For the Bowl
  • 1 cup quinoa cooked
  • 1 cup cherry tomatoes halved
  • 1 english cucumber diced
  • 1/2 cup red onion sliced
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese crumbled
For the Spicy Harissa Vinaigrette
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp harissa paste
  • 1 clove garlic minced
  • 1/2 tsp honey
  • 1/4 tsp salt

Method
 

Step 1: Prepare and Cook the Chicken
  1. In a medium bowl, toss the chicken breast with olive oil, za'atar, salt, and pepper until evenly coated.
  2. Heat a large skillet over medium-high heat. Place the seasoned chicken in the hot skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature 165°F).
  3. Remove the chicken from the skillet and let it rest on a cutting board for at least 5 minutes. Dice the chicken into bite-sized pieces once rested.
Step 2: Make the Vinaigrette
  1. While the chicken rests, combine the olive oil, lemon juice, harissa paste, minced garlic, honey, and salt in a small bowl or a jar with a tight-fitting lid.
  2. Whisk vigorously or shake the jar until the dressing is well combined and emulsified.
Step 3: Assemble the Bowls
  1. In a large bowl, gently toss together the cooked quinoa, halved cherry tomatoes, diced english cucumber, sliced red onion, and kalamata olives. Divide this mixture evenly between two or three bowls.
  2. Top each bowl with the diced za'atar chicken and crumbled feta cheese.
  3. Drizzle generously with the spicy harissa vinaigrette just before serving.
