Step 1: Marinate the Chicken
- In a medium bowl, combine the chicken breasts with the lemon juice, olive oil, minced garlic, dried oregano, paprika, salt, and pepper.
- Make sure each piece of chicken is well coated.

Step 3: Cook the Chicken
- Heat a large skillet or grill pan over medium-high heat.
- Place the marinated chicken on the hot surface and cook for 6 to 8 minutes per side. The chicken is done when it's golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
- Remove the chicken from the heat and let it rest on a cutting board for a few minutes to lock in juices.
- Once rested, slice or dice it into bite-sized pieces.
Step 4: Assemble Your Bowls
- Divide the cooked quinoa evenly among four bowls.
- Arrange the sliced chicken, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives over the quinoa. For presentation, create sections for each ingredient.
- Drizzle a generous amount of the whipped feta dressing over everything. Serve immediately and enjoy!
