  • 1 clove garlic

  • juice of 1 lemon
  • 1/2 cup olive oil
  • 1/2 cup almonds
For the Crispy Chickpeas
  • 1 15-ounce can chickpeas rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
For the Bowls
  • cooked quinoa
  • spinach or kale

  • feta cheese
  • kalamata olives

Method
 

Make the Roasted Red Pepper Sauce
  1. In a food processor or blender, combine the drained roasted red peppers, garlic, salt, lemon juice, and almonds. Pulse the mixture a few times until it is roughly chopped. With the blender running on low, slowly stream in the olive oil until the sauce comes together. Be careful not to over-blend; you want a thick and textured sauce, not a perfectly smooth puree.
Cook the Quinoa
  1. Rinse your uncooked quinoa in a fine-mesh sieve under cold running water for at least 30 seconds. This removes saponin, a natural coating that can make it taste bitter.
  2. For the stovetop, use a 2 to 1 ratio of water to quinoa. Bring the water and a pinch of salt to a boil in a saucepan. Add the rinsed quinoa, reduce the heat to a low simmer, cover, and cook for about 15 minutes, or until all the water is absorbed.
  3. Remove it from the heat and let it stand, covered, for 5 more minutes. Finally, fluff it with a fork. For a completely hands-off method, you can also use a rice cooker with the same water-to-quinoa ratio.
Prepare the Crispy Chickpea Topping
  1. Preheat your oven to 400°F (200°C). Pat the rinsed chickpeas very dry with a paper towel; this is key for crispiness.
  2. On a baking sheet, toss the chickpeas with olive oil, smoked paprika, cumin, and salt until they are evenly coated.
  3. Roast for 20 to 25 minutes, shaking the pan halfway through, until they are golden brown and crispy.
Assemble Your Bowl
  1. Now for the fun part. Start building your Mediterranean Quinoa Bowl by creating a bed of spinach or kale in your bowl.
