Ingredients
  

  • 1 ⅓ cups uncooked long grain white rice
  • 2 ⅔ cups chicken broth
  • 1 pound large or jumbo shrimp (peeled and de-veined)
  • 4 tablespoons butter melted, divided
  • 1 teaspoon minced garlic
Cajun seasoning
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano may sub an Italian herb blend or Herbs de Provence
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Method
 

Step 1: Prepare Cajun Seasoning
  1. In a small bowl, whisk together paprika, salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and crushed red pepper flakes to create your cajun spice mix.
Step 2: Sauté Rice
  1. Heat 2 tablespoons of melted butter in a large skillet over medium heat. Add minced garlic, half of the cajun seasoning, and the uncooked rice. Stir everything together until the rice is fully coated in the buttery spice mixture.
Step 3: Cook the Rice
  1. Pour chicken broth into the skillet and bring the mixture to a boil. Reduce the heat to a simmer, cover the skillet, and cook for 15 minutes. Stir occasionally to prevent the rice from sticking to the pan.
Step 4: Season the Shrimp
  1. In a separate bowl, combine the remaining 2 tablespoons of melted butter with the rest of the cajun seasoning. Toss the shrimp in this mixture until they are evenly coated.
Step 5: Combine the Shrimp and Rice
  1. Add the seasoned shrimp to the skillet with the rice. Cover and cook everything together for an additional 3–5 minutes, just until the shrimp turn pink and opaque.
Step 6: Serve and Enjoy
  1. Serve the shrimp and rice while warm. It’s great on its own or paired with a green salad or roasted vegetables. Enjoy!
