Method
 

Step-by-Step Instructions:
  1. Preheat oven to 425°F (220°C). In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, kosher salt, and black pepper to make the marinade.
  2. Toss chicken thighs in ⅔ of the marinade and let sit for 10–15 minutes.
  3. Spread zucchini, bell pepper, red onion, and cherry tomatoes on a sheet pan. Coat the vegetables with the remaining marinade and toss to combine.
  4. Add chicken thighs to the sheet pan, nestling them among the vegetables. Bake for 30 minutes.
  5. Sprinkle olives and feta cheese over the vegetables and chicken. Bake for an additional 10–15 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Garnish with fresh parsley and serve immediately while hot.
