Ingredients

  • 1 1/4 cups unsweetened soy milk (or milk of choice)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup pumpkin puree
  • 1 1/2 tbsp pure maple syrup
  • 1 tsp pumpkin pie spice
  • 1/8 tsp fine sea salt
  • 1/3 cup chia seeds
For Assembly:
  • Greek yogurt (additional for layering)
  • fresh berries (for layering) such as blueberries, raspberries, strawberries, blackberries

Equipment

  • Medium mixing bowl
  • Whisk
  • glassware
  • Airtight container

Method

Step 1: Mix the Base
  1. In a medium mixing bowl, combine the unsweetened soy milk, plain Greek yogurt, pumpkin puree, pure maple syrup, pumpkin pie spice, and fine sea salt. Whisk thoroughly until the mixture is completely smooth and well combined.
Step 2: Incorporate Chia Seeds
  1. Add the chia seeds to the mixture. Whisk again vigorously to ensure the seeds are evenly distributed and no clumps form. Taste the mixture now and adjust seasoning if needed – a tiny pinch more salt can really make the flavors pop!
Step 3: First Chill & Second Whisk
  1. Let the mixture sit for 5-10 minutes. After this initial resting period, give it another thorough whisk. This crucial step helps prevent clumping and ensures a consistently smooth texture as the chia seeds begin to thicken.
Step 4: Final Chill
  1. Cover the bowl tightly and refrigerate for at least two hours, or preferably four hours, until the chia seed mixture has thickened into a pudding-like consistency.
Step 5: Assemble & Enjoy
  1. Once chilled and thickened, layer the chia pudding, Greek yogurt, and your favorite berries in a glass or jar. Serve immediately.

Notes

This parfait is best assembled just before serving. For grab-and-go breakfasts, you can make the chia pudding base up to 2 days in advance and store it separately. Top with whipped cream, crushed cookies, or toasted nuts for added texture and flavor. This recipe is highly customizable; feel free to adjust sweeteners and spices to your preference.
