Preheat the Grill

- Generously coat the flesh side of the salmon fillets with grapeseed oil. Season evenly with kosher salt and black pepper.
Grill the Salmon
- Skin side down: Place the salmon over direct high heat with the lid closed for 6-8 minutes. The color of the salmon will lighten, and the flesh becomes firmer. Flip carefully with a fish spatula. Cook to an internal temperature of 130°F or desired doneness.
Rest and Serve
- Transfer fillets to a serving platter and let rest for 1-2 minutes. Slide the crispy skin off if desired. Garnish with lemon wedges and serve.
