Full Ingredient List
  • 2 teaspoons olive oil
  • Salt and pepper to taste
  • 1 pound ground beef 90% lean
  • 1 onion finely diced
  • 2 teaspoons minced garlic
  • 4 cups green cabbage coarsely chopped
  • 2 carrots peeled, quartered, and sliced
  • 4 cups beef broth
  • 3 8-ounce cans tomato sauce
  • 1/2 cup long grain rice uncooked
  • 1 bay leaf
  • 3 tablespoons brown sugar
  • 2 tablespoons parsley

Equipment

  • large pot
  • spatula
  • Cutting board
  • Knife

Method

Step 1: Brown the Beef
  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and season with salt and pepper. Cook the beef, breaking it apart with a spatula, until browned – about 4–5 minutes.
Step 2: Sauté Aromatics
  1. Add the finely diced onion and minced garlic to the pot, stirring occasionally. Let them cook for 2–3 minutes until softened and fragrant.
Step 3: Combine Ingredients
  1. Add the chopped cabbage, sliced carrots, beef broth, tomato sauce, uncooked rice, bay leaf, and brown sugar. Stir everything together and season again with salt and pepper to taste.
Step 4: Simmer and Cook
  1. Bring the mixture to a gentle simmer. Cover and cook for about 25 minutes, or until the rice is tender. Once done, remove the bay leaf and discard it.
Step 5: Add Finishing Touches
  1. Sprinkle the finished soup with fresh parsley, serve it steaming hot, and enjoy!
