Step 1: Build the Flavor Base
- Heat the olive oil in a large Dutch oven over medium-high heat. Sauté the diced onion and celery for 2–3 minutes until soft and translucent. Add the garlic and cook for another 1–2 minutes until fragrant.
Step 2: Cook the Ground Beef
- Add the ground beef to the pot and cook until it’s fully browned and no pink remains.
Step 3: Combine Ingredients and Simmer
- Stir in the tomato paste, diced tomatoes, green beans, black-eyed peas, carrots, potatoes, corn, spices, and 4 cups of beef broth. Add up to 2 more cups of broth for your desired consistency. Bring to a boil over high heat.
Step 4: Simmer and Adjust Seasoning
- Lower the heat to medium-low, cover, and simmer for 14–16 minutes until the potatoes are fork-tender. Taste and season with additional salt, pepper, or red pepper flakes, as desired.
Step 5: Serve and Enjoy
- Serve hot with your favorite toppings. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for longer storage.
