Sauté the Vegetables
- Add butter to a large stock pot over medium-high heat. Sauté diced celery and carrots for 3 minutes until they begin to soften. Add minced garlic and cook for an additional 30 seconds until fragrant.
Season and Prepare the Broth
- Pour in chicken stock and season with rosemary, thyme, crushed red pepper flakes, salt, and pepper to taste. Enhance it with a spoonful of “better than bouillon” chicken flavor or bouillon granules, as needed.
Cook the Noodles
- Bring the broth to a boil. Add uncooked homemade egg noodles or dry store-bought pasta. Cook until the noodles are just al dente.
Add the Chicken
- Stir in the shredded rotisserie chicken. Adjust seasonings if needed after tasting the broth.
Finish and Store
- Once the noodles are tender, remove the pot from heat. Allow the soup to cool slightly. Store leftovers in an airtight container in the refrigerator for up to 5 days.
