Preheat and Prep
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
Cut and Season Chicken
- If your chicken breasts aren't already cutlets, carefully slice them horizontally through the thickest part to create two thinner pieces. For uniformity, you can gently pound them to an even thickness between sheets of plastic wrap. Season the chicken cutlets generously on all sides with 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 tablespoon smoked paprika, kosher salt, and pepper.
Set Up Breading Station
- Prepare three shallow plates or dishes. Plate 1: Add the ½ cup all-purpose flour. Plate 2: Beat the 2 eggs with the 2 tablespoons olive oil and a pinch of salt. Plate 3: Add the 2 cups of finely crushed corn flakes.
Coat the Cutlets
- Dredge each seasoned chicken cutlet first in the flour, ensuring it's lightly coated and shaking off any excess. Then, dip it into the beaten egg mixture, letting any excess drip off. Finally, press the cutlet firmly into the crushed corn flakes, ensuring an even and generous coating. Place the coated cutlets onto the prepared baking sheet, ensuring they are not overcrowded to promote crispiness.
First Bake
- Bake the chicken cutlets for 15 minutes. They may not be fully cooked through at this point, which is expected.
Make the Hot Honey Sauce
- While the chicken bakes, whisk together the ¼ cup honey, 1-2 tablespoons sriracha or hot sauce, 1 teaspoon apple cider vinegar, and the optional 1 teaspoon crushed red pepper flakes in a small bowl. Adjust the sriracha to your preferred spice level.
Add Feta and Sauce
- Carefully remove the baking sheet from the oven. Evenly distribute the 8 ounces of crumbled feta cheese over the top of each chicken cutlet. Drizzle the prepared hot honey sauce over the feta and chicken.
Final Bake
- Return the baking sheet to the oven and continue baking for approximately 10 more minutes, or until the chicken is fully cooked through (internal temperature reaches 165°F or 74°C) and the cornflake coating is golden brown and crispy.

Notes
Nutrition information is estimated based on common ingredients and serving sizes and may vary.
For the best texture, reheat leftovers in a preheated oven or toaster oven at 350°F (175°C) until warmed through and crispy again. Microwaving is not recommended as it can make the coating soggy.
