  • 2 tbsp Cream cheese cut into chunks
  • 0.75 tsp Sea salt to taste
  • Chives optional, for garnish

Equipment

  • Microwave-safe bowl
  • Steamer basket
  • food processor
  • immersion blender
  • Potato masher
  • cheesecloth

Method

Option 1 - Microwave Method
  1. Place cauliflower florets and minced garlic in a microwave-safe bowl with 1 tablespoon of water.
  2. Cover tightly and microwave on high for 8-10 minutes, or until very tender.
  3. Carefully drain all excess water.
Option 2 - Steam Method
  1. Place cauliflower florets in a steamer basket over boiling water.
  2. Cover and steam for 8-12 minutes, or until very tender.
  3. Drain thoroughly, pressing out as much water as possible.
Make the Mashed Cauliflower
  1. Once the cauliflower is cooked and drained, return it to the (dry) pot or a food processor.
  2. Add the olive oil, minced garlic (if not already added during cooking), butter, cream cheese, and sea salt.
  3. Mash using a potato masher for a rustic texture, or use an immersion blender or food processor for a super smooth consistency.
  4. Blend until you reach your desired texture, scraping down the sides as needed.
  5. Taste and adjust salt as necessary.
  6. Serve immediately, garnished with fresh chives if desired.

Notes

Ensure your cauliflower is extremely well-drained after cooking. Squeeze it in a clean kitchen towel or cheesecloth if necessary. Don't overcook the cauliflower; cook just until fork-tender. Gently warm butter and cream cheese before adding. Season generously with salt and taste to adjust. A pinch of nutmeg or a dash of garlic powder can add depth. Avoid a watery mash by thoroughly draining the cauliflower. Bland flavor can be fixed with more seasoning. Avoid mushy texture by not overcooking. Cold ingredients can cause lumps. Mince and cook garlic slightly to mellow its flavor.
