Method
Prepare the Pan
- Preheat the oven to 350°F. Line a small loaf pan (8.5 X 4.5 inches) with parchment paper with an overhang. Lightly spray the lined pan with avocado oil for easy removal.
Mix Wet Ingredients
- In a medium bowl, whisk together eggs, pumpkin puree, stevia glycerite, and vanilla extract until smooth. Add the cinnamon and whisk to combine.
Add Dry Ingredients
- Gradually add almond flour to the wet mixture, switching to a rubber spatula as the batter thickens. Mix in kosher salt and baking soda evenly.
Transfer to the Pan
- Using a rubber spatula, transfer the batter to the prepared pan. Smooth out the top evenly.
Bake
- Bake for about 40 minutes, or until the bread is browned, set, and a toothpick inserted in the center comes out clean.
Cool the Bread
- Using the excess parchment paper as handles, carefully remove the bread from the pan and transfer it to a wire cooling rack. Remove the parchment to allow air to circulate.
Rest and Slice
- Cool the bread on the cooling rack for at least 30 minutes. Letting it rest before slicing ensures it won’t crumble. Slice the bread into 10 pieces and serve warm.
