  • 1 1/2 cups Wholesome Yum Blanched Almond Flour
  • 1/2 cup Collagen protein powder
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 6 tbsp Unsalted butter (melted)
  • 1 tsp Vanilla extract
For the Filling
  • 24 oz Cream cheese (softened)
  • 1 cup Pumpkin puree (at room temperature)
  • 1 cup Besti Powdered Monk Fruit Allulose Blend
  • 3 large eggs (at room temperature)
  • 1 tsp Pumpkin pie spice
  • 1/2 tsp Cinnamon

Method
 

Crust
  1. Combine almond flour, collagen protein powder, and monk fruit sweetener in a bowl. Stir in melted butter and vanilla extract until evenly mixed.
  2. Press the mixture into the bottom of a springform pan, creating an even layer. Pre-bake the crust at 350°F for 10 minutes, then allow it to cool completely.
Filling
  1. Blend softened cream cheese, pumpkin puree, powdered monk fruit sweetener, eggs, pumpkin pie spice, and cinnamon until smooth and well combined.
  2. Ensure all ingredients are at room temperature to achieve a lump-free consistency.
Bake
  1. Pour the creamy filling into the cooled crust.
  2. Place the springform pan into a water bath to prevent cracks during baking.
  3. Bake at 325°F for approximately 60 minutes or until the edges are set while the center jiggles slightly.
  4. Let the cheesecake cool to room temperature for about 2 hours before transferring it to the fridge for at least 4 hours or overnight.
