  • 3 tbsp powdered Swerve Sweetener
  • 1 tbsp heavy cream
  • 1/2 tsp vanilla

  • 1/2 cup Swerve Sweetener
  • 1/4 cup unflavoured whey protein powder (or egg white protein)
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cloves)
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup pumpkin puree
  • 1/4 cup butter melted
  • 1/4 cup water
  • 1/2 tsp vanilla extract

Method
 

Cream Cheese Filling
  1. Beat softened cream cheese, powdered Swerve Sweetener, heavy cream, and vanilla until smooth and creamy.
Muffins
  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In a large bowl, whisk together almond flour, Swerve Sweetener, whey protein powder, baking powder, pumpkin pie spice, and salt.
  3. In a separate bowl, combine eggs, pumpkin puree, melted butter, water, and vanilla extract until smooth.
  4. Carefully fold the wet ingredients into the dry mixture, stirring until just combined—avoid overmixing.
  5. Fill each muffin cup halfway with the batter, add a spoonful of the cream cheese filling, and top with the remaining batter.
  6. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Let muffins cool before serving.
