Prepare the Pie Crust
- Lightly butter a 9-inch pie pan. Roll out the pie crust into a roughly 13-inch circle between two sheets of parchment paper. Dust lightly with coconut flour as needed. Transfer to the pan using the parchment paper as an aid. Crimp the edges or trim, refrigerate, and preheat the oven to 400°F/200°C.
Mix the Sweetener & Spices
- In a small bowl, mix together the sweetener, salt, and spices. Set aside.
Prepare the Filling
- Lightly beat the eggs in a large bowl. Add the pumpkin puree, heavy cream, vanilla extract, and continue to beat until thoroughly incorporated. Then, add in the sweetener and spices mix and beat until combined.
Assemble & Bake
- Place the refrigerated pie pan on a baking tray and cover the crust edges with aluminum foil to prevent over-browning. Pour the pumpkin filling into the crust and bake at 400°F/200°C for 50–65 minutes. Uncover crust edges around the 40-minute mark. Insert a toothpick near the edge; it should come out barely moist while the center remains slightly jiggly.
Cool & Chill
- Allow the pie to cool completely at room temperature, then chill in the fridge for 2–3 hours for the best texture.
