Ingredients
  

For the Chicken
  • 1 lb. chicken breast boneless, skinless, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Greek seasoning see notes on how to make your own
  • 1/4 teaspoon sea salt
For the Tzatziki
  • 8 oz. Greek yoghurt plain, full-fat
  • 1/2 medium Persian cucumber grated
  • 2 cloves garlic grated
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill minced
  • Sea salt as needed
  • Black pepper as needed
For the Dressing
  • 1 tablespoon red wine vinegar
  • 1 teaspoon fresh oregano minced
  • Sea salt to taste
For Assembly
  • 1 large Persian cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/3 cup Kalamata olives pitted
  • 4 oz. feta cheese crumbled

Method
 

Step 1: Marinate the Chicken
  1. Combine the chicken, olive oil, lemon juice, red wine vinegar, Greek seasoning, and sea salt in a sealable container. Marinate the chicken in the refrigerator for at least 30 minutes or up to overnight.
Step 2: Prepare the Tzatziki
  1. In a medium bowl, stir together the Greek yogurt, grated cucumber, garlic, lemon zest, fresh lemon juice, dill, sea salt, and black pepper. Refrigerate the tzatziki until you’re ready to serve.
Step 3: Cook the Chicken
  1. Heat a 10-inch (25-cm) or larger cast-iron skillet over medium-high heat. Add the chicken and its marinade to the skillet. Cook the chicken for 3–4 minutes per side, ensuring it browns beautifully and its internal temperature reaches 165°F (74°C).
Step 4: Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, and sea salt. Set aside until ready to use.
Step 5: Assemble the Bowls
  1. Divide the cooked chicken evenly among four serving bowls. Arrange the diced cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese around the chicken. Drizzle the dressing over the bowls and finish with a dollop of tzatziki right before serving.
