Ingredients
  

For the Marinade/Dressing
  • 0.25 cup olive oil
  • 2 lemons juiced
  • 1 tablespoon honey
  • 0.5 tablespoon lemon zest
  • 1 clove garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Kosher salt to taste
  • Kosher pepper to taste
For the Bowls
  • 1.5 cups quinoa uncooked
  • 4 medium chicken breasts boneless and skinless, approximately 2 lbs
  • 1 English cucumber diced
  • 4 Roma tomatoes chopped
  • 1 red onion medium, diced
  • 1 cup feta cheese crumbled
  • 1 cup kalamata olives pitted

Method
 

Cook the Quinoa
  1. Add the 1 ½ cups quinoa to a saucepan with 2 cups of water and a pinch of salt. Simmer for 12–15 minutes until tender. Drain if needed and let cool completely.
Prepare the Dressing/Marinade
  1. Combine olive oil, lemon juice, honey, lemon zest, garlic, oregano, basil, kosher salt, and pepper in a jar. Stir vigorously to emulsify.
Marinate the Chicken
  1. Pour 1/3 of the marinade over chicken breasts, ensuring even coating. Reserve the remaining marinade for dressing.
Grill the Chicken
  1. Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F.
Build the Bowls
  1. Divide the cooled quinoa among four serving bowls. Top with the grilled chicken, diced cucumber, chopped tomatoes, and diced red onion.
Add Final Touches
  1. Sprinkle crumbled feta cheese and kalamata olives over the bowls. Drizzle the reserved untouched dressing over the top before serving.
