Ingredients
  

Meatballs
  • 1 lb. ground chicken (99/1)
  • 1/4 cup Italian breadcrumbs (28g)
  • 1/4 cup parsley finely chopped
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp. dried oregano
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
Tzatziki Sauce
  • 1 cup 2% plain Greek yogurt (224g)
  • 1/2 cup cucumber finely grated and drained (84g)
  • 2 Tbsp. lemon juice
  • 2 Tbsp. fresh dill finely chopped (or 1 tsp. dried)
  • 1 Tbsp. olive oil
  • Salt and pepper to taste
Greek Salad
  • 1 1/2 cups cucumber (chopped, 200g)
  • 1 cup cherry tomatoes (cut in half)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup pitted kalamata olives (sliced lengthwise, 80g)
  • 1/2 cup fat-free feta cheese (56g)
  • 1/2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1/2 Tbsp. balsamic vinegar
  • Pinch of salt
Assembly
  • 2 cups cooked brown rice
  • 4 cups romaine lettuce (chopped)

Method
 

For the Meatballs
  1. In a large mixing bowl, combine ground chicken, breadcrumbs, parsley, onion, garlic, oregano, cumin, salt, and black pepper.
  2. Mix gently to combine, being careful not to overmix to ensure tender meatballs.
  3. Using a tablespoon or small ice cream scoop, portion out the mixture. Wet your hands to shape into even ball shapes.
  4. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Place the meatballs evenly on the sheet and bake for 20–22 minutes, or until their internal temperature reaches 165°F.
For the Tzatziki Sauce
  1. In a medium bowl, mix Greek yogurt, grated and drained cucumber, lemon juice, dill, olive oil, and a pinch of salt and pepper.
  2. Stir until smooth. Cover and refrigerate to allow flavors to meld.
For the Greek Salad
  1. In a large bowl, combine chopped cucumber, cherry tomatoes, thinly sliced red onion, kalamata olives, and feta cheese.
  2. Drizzle with olive oil, lemon juice, balsamic vinegar, and a pinch of salt. Toss gently to coat evenly.
Assembly for Mediterranean Bowl
  1. Start with a base layer of cooked brown rice and chopped romaine lettuce in a serving bowl.
  2. Arrange baked chicken meatballs on top, followed by the fresh Greek salad.
  3. Finish with a generous dollop of chilled tzatziki sauce.
