Sauté Aromatics
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat for 2 minutes. Sauté onion and garlic until tender and browned, about 2-3 minutes.
Wilt the Spinach
- Add spinach and sauté for 1 minute until soft. Set aside on a plate to cool for 5 minutes.
Combine Ingredients
- In a large mixing bowl, combine ground chicken, sautéed onion-spinach mixture, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly.
Chill the Mixture
- Shape the mixture into a firm ball. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or overnight.
Form the Patties
- Take 1/2 cup chicken mixture at a time and shape into patties. Makes about 12 patties.
Cook the Patties
- Heat 1 tablespoon olive oil in a cast-iron skillet over medium-high heat for 2 minutes. Cook patties in batches of 6, searing each side for 3-5 minutes or until internal temperature reaches 165°F.
Serve and Enjoy
- Serve warm with rice pilaf and sautéed vegetables, or in hamburger buns with tzatziki sauce for an extra Mediterranean flavor.
