  • 1 lb skinless boneless chicken thighs (or breasts)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 oz fresh spinach
  • 4 cloves garlic (minced)
  • 8 oz cherry tomatoes (halved)
  • 6 oz crumbled feta cheese
  • 2 tablespoons freshly squeezed lemon juice

Method
 

Cook the Chicken
  1. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Preheat the skillet to achieve a beautiful sear.
  2. Cut the chicken thighs or breasts into uniform pieces for even cooking.
  3. Season the chicken pieces with smoked paprika, dried oregano, salt, and black pepper.
  4. Place the chicken in the skillet in a single layer and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
Make the Veggie Mixture
  1. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  2. Add fresh spinach and stir until wilted.
  3. Mix in halved cherry tomatoes and return the cooked chicken to the skillet. Simmer for 2-3 minutes to blend flavors.
  4. Drizzle freshly squeezed lemon juice and sprinkle crumbled feta cheese over the top. Serve warm and enjoy!
