Step 1: Prep the Chicken
- Slice each chicken breast in half lengthwise to make 4 thinner cutlets. Season both sides of each cutlet with salt, pepper, dried oregano, and garlic powder.
Step 2: Cook the Chicken
- Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken and cook for 5–6 minutes on each side until golden brown and fully cooked. Check that the internal temperature reaches 165°F. Transfer the chicken to a plate and set aside.
Step 3: Build the Sauce
- Lower the heat to medium. Stir garlic, white wine (or chicken broth), little tomatoes, Kalamata olives, and capers into the skillet. Let the mixture simmer for 3–4 minutes, allowing the tomatoes to soften slightly. Add extra broth if the sauce reduces too quickly.
Step 4: Finish & Serve
- Add the fresh spinach and crumbled feta to the skillet and stir gently until the spinach wilts. Return the cooked chicken along with its juices to the pan, warming everything through for 1–2 minutes. Taste and adjust the seasoning as needed before serving immediately.
